April 21, 2023 - Opened the Coravin sample bottle a week ago.
Excellent bottle.
Smoth, acidity and tannins still fine. A lot of mature fruit on the dark red to black side, with root. Minerality too.
With lamb, garlic, rosemary. Great match. Bbq from Argentina - I would love with this wine!!!
1-2h of decant for it. Keep under 18C, Big difference and hade to change my acidity and tannins note.

April 14, 2023 - Coravin sample after dinner…
Dry and tannic, acidity, but like some more fruit and complexity. Cold cherry.
Some alcohol.
Not sure if the fruit will make it for much longer.
Will start to work my way down the case. Feel like I should have ”missed the war”.
