    December 31, 2023 - 3 hour slow ox with a 3 hour decant and it still wasn’t totally open. Beautifully complex, so many layers. Iron, iodine, forest floor and mustiness on the nose. Palette is violet, bacon fat and some other things I just can’t put my finger on.

    It’s a baby. Glad I tried it but it needs 3-4 years to really approach a drinking window and will hold for 20+.
