  Still, I quite enjoyed it. It was fun to taste a little bit of English wine history.
  This was in the old Nyetimber livery and was, I believe, disgorged in 2007.
  Drunk at the Sportsman in Seasalter.

  June 7, 2013 - My first English sparkling wine. Purchased in London at Fortnum & Mason in 2012 and stored in personal cellar since. Table side notes are limited and include: Opened with normal effort. Color was a medium yellow or light amber, and shows reasonable age. Wine had a nice central bead. Nose and palate of apple, baker's yeast, and dry honey. This wine did not show any brandy-like flavors that I associate with some older champagnes. Good acidity, but not as crisp a younger wine. Overall, very nice and probably a bit better if consumed a year or two earlier. Still, this 12 year-old sparkling wine was enjoyable.
  
  (Brought to Central Kitchen, in San Francisco. Waitstaff handled the wine with great ease. Served with all courses; was especially good with the flat bread cheese platter with fennel/honey jam and the outstanding apricot salad with greens.)
