    December 31, 2020 - New Year's Eve Dinner (Herald & Teni's Place, Hong Kong): Decanted for an hour then re-bottled for three more before serving. Deep golden bright urine colour. Big legs. On decanting the nose is very reticent ... yellow daisies (not what I was expecting), yellow Chinese rice wine, an empty tennis ball tube, some dried mandarin peel....opens up a lot more with time. On opening the palate is thick, mouth coating, balanced medium acidity, steamed yellow Chinese chicken skin, fresh figs, very slight almond-driven oxidation, deep yellow stone fruits. Quite strong fruit stone tannin but which frames the wine well although it calls for drinking with food. Big and long inside the head on the finish. Absolutely lovely with runny French cheeses, especially Epoisses and Saint Nectaire. My last and best bottle of a case bought on release. 93+

    January 20, 2019 - Despite this cellared since release bottle being clearly on the downside, there is still a lot to love here. Nose offers white ash, toffee, orange and grapefruit skin, banana custard, and a hint of smoked whitefish. Still deliciously creamy, we note lime custard, a bit of camphor, marjoram, clean linen, and tart apple. Finish is quite dry, with a pleasant stone pit bitterness. Drink it up with smoked chicken or turkey, or maybe a grilled veal chop with cumin seasoned green apple salsa.

    September 7, 2018 - Friday Bangers 'n Mash Dinner (Our House, Hong Kong): Opened to breathe for 2 hours before serving. Quite golden colour now compared to its youth. Lovely nose of autumnal white peach and some honeysuckle. Palate is deep and nutty, dried mandarin orange fruit, very harmoniously rounded and integrated. Heady but getting a bit too alcohol-forward at this advanced stage of its life.

    April 28, 2018 - Dinner at Limewood, Repulse Bay, Hong Kong (Limewood, The Pulse, 30 Beach Road, Repulse Bay, Hong Kong): Drank fairly informally with friends at a beachside restaurant - almost the last of a case that I have enormously enjoyed. Has put on depth of colour and weight on the nose and palate since I last drank it 11 months ago. Is now on a gentle decline from its peak drinking window..no flabbiness, still lots of super honeysuckle and Crunchie bar but the acidity has dropped and it no longer has the tension, balance and minerality it once had. Still resonant and long...and a lovely wine that has always been one of my two favourite Kistler vineyards.
