November 10, 2017 - A stellar bottle providing great purity and lots and lots of complexities. Saline, Iodine, Fresh backbone, and tons of dreamy aromatics and flavos. These days, I was accustomed to be disappointed with F. Fevre but this sure proved me wrong. No doubt that this particular bottle would have kept many more years, but better to open them young than too late! Cheers,

October 23, 2017 - Although not completely premox (as was the '02 Fevre Bourgros I opened first) it is clearly on its way there. Just barely drinkable, so still a disappointment.
I find it hard to convey how depressing it is to find so many of my white burgundies suffering from premature oxidation. It leads me to open one with trepidation these days, & to have another on hand in case. The Burgundian wine industry owes its customers at least a complete explanation for this wide-spread phenomenon, if not some degree of compensation.

October 2, 2017 - Medium yellow. More apple than citrus and some musky saline notes. Marvelous breadth and depth for a 2007 Chablis, and it accomplishes this without the least trace of wood. Ripe fruit, excellent acidity, lots of soil/stone on the finish. Much more complete and exciting than the last bottle, a Clos that would hold its own against other great bottlings. This took on even more structure and grip as it opened, toning down some of the perceived natural sweetness of fruit.

September 10, 2017 - Pale yellow-green. Amazing minerality and when it opened up - WOW. such heft and razor sharp focus. a Chablis to remember.

August 20, 2017 - PnP. Perfect cork and fill. Light greenish gold. Classic nose though perhaps more Chardonnay fruit than sea air and limestone as is typical. Lovely on the palate - nice balance between the Chablis character and a more rounded fruit presentation - modest acidity on the finish to round this out. Last bottle - no premox seen in these. Very nice though possibly past its peak.
