    September 13, 2017 - Served to me double blind. I didn't pick it, but this was another 2007 Fèvre Grand Cru showing beautifully. Relatively deep gold. A lovely bouquet of citrus, meadow flowers and typical Chablis notes of oyster shell and ocean breeze. The palate confirmed this as a Grand Cru Chablis, although I guessed the vintage as 2014, rather than 2007. Still relatively fresh and primary. Mainly citrus and some orchard fruit with flecks of pineapple and other exotic fruit. Moving slightly honeyed but mineral, chalky and precise. Lovely acid cut and good length, finishing dry. A bottle showing no sign of premox.

    July 16, 2017 - Lovely mix of green apple, pear, wet stones and a lovely hint of floral and butter/oak. Very elegant and has a long finish.

    After an hour, the gunflint and slightly buttery flavours start developing.

    On day 2 (by leaving the wine in a wine glass), the acidity mellows out and the salinity / oyster and gunflint flavours become more prominent. This makes the wine highly interesting.

    June 13, 2017 - Two evenings, two very different Fèvre Grand Cru experiences: Maritime, chalky, citric and breezy aromas, with barely a hint of oak. On bouquet alone, I was convinced this was a quality, probably Grand Cru, Chablis. In the mouth, my impressions were confirmed. Lovely, detailed notes of greengages, lemons and limes, with some pear. Relatively austere at its core. Great purity of fruit. Not showing excessive oak or exotic fruit notes. I guessed this might be a '12 Dauvissat Grand Cru, needing 3+ more years to be at its optimum. Sparking acids. On the reveal, 2007 wasn't a surprise. Mineral and a little saline on the long finish.

    May 7, 2017 - Pale yellow. Chalky, minerally, citrusy and floral could all be used to describe the aromatics of the 2007 Fevre Preuses. It is medium-bodied, with a silky-smooth texture, and is crammed with candied lemons, minerals and a serious acidic spine. Very long on the palate-gripping finish, with an interesting, late-arriving saline-like quality. An outstanding Chablis at its apogee. 95.
