August 2, 2017 - Blind White Dinner: Top Producers' Bienvenues-Bâtard-Montrachet (Acadia - Chicago IL): Damn Carillon, this was even more oxidized than expected, and it was tasted single blind in the flight.

June 28, 2014 - Four Carillon BBM's, oldest to youngest. All were drunk literally over three hours, so we really got the impact of air over time. The 88 was a recent Domaine release, so fresh, and very good. The 96 was simply off the charts, and continues to be my favorite of all time. The 99 was the weakest for me, and while decent, just didn't impress. The 02 was good, but didn't hit the level we expected or have experienced previously.

June 16, 2014 - Paul Pernot Featured at the Lieu-dit Cru Blind White Burgundy Dinner (L2O - Chicago IL): Single blind in 1999 BBM horizontal. Lots of ripe stone and tropical fruit, but clearly very advanced and several years past its peak drinking window.

April 9, 2012 - Ruchottes-Chambertin Dinner (Boka - Chicago IL): Mature ripe apple and tropical fruit aromas with new oak spice. Similar palate with more prominent spice. Also fairly mature. If representative, i would have imagined this as better a few years back, but still drinking well.

June 1, 2011 - Love this wine. This bottle had the laser like structure and minerality l that makes it great. The bottled added on weight over 4 hours that rounded it out in a good way.

May 16, 2011 - Great showing. Light golden color. Wine had good acidity with flavors of white fruit, flowers and minerals. Did not have the laser like mouthfeel as previous bottles.

March 13, 2011 - This wine, tasted blind, showed a medium yellow center with clear rims. The medium intensity nose displayed green apples, macaroons, wood, and white stone. As the wine aired, the wood element receeded but it was still noticable.

This BBM was young and crisp in the mouth with great length. It was clearly very young but this example left me wondering if the oak would ever be fully integrated.

February 17, 2011 - Gold in colour. Citrus nose with hints of brown sugar. Very precise and focused wine with a lengthy minerally finish.

May 23, 2010 - This wine displayed a bright yellow color with clear rims. The nose seemed a bit tight as it was only medium intensity. It was reduced and off-putting at first but it developed well after about an hour of air, showing lemon, apple, and some orange flavors. In the mouth, the wine had great weight and presence with (in order) ginger, lemon, apple, and a distinct white stone backbone. While it is impressive now, this seemed like it needed more time (say 10 years).
