November 12, 2021 - Opened 90 minutes before dinner & decided to slox ox the rest of the way. Started drinking 3hrs out after the champagne charcuterie course. Drank in Riedel Vinum Burgs. Semi opaque ruby garnet w/ edge lightening. Glass filling aromas of; faded fruit, spice rack, charcuterie & garrigue. Sips are elegant & resolved w/ a complex mix of; faded fruit, forest floor, mushroom, savory all spice & mineral. Love its tertiary maturity. Might prefer a little more zip for my liking but a nice old CDP. 13.5% alc I had stood the btl up on an angle to collect the sediment in the back bottom of the btl but with guest handling it got spun up in btl making the last glasses a bit cloudy and grainy. My last of 6 or so & quite satisfying. For me, drink them sooner than later.

November 9, 2021 - Nita's Cassoulet and Mostly CdP (Craig & Nita's Place): Dark red color with a 12mm transition to clear. Same bottle as Chablis28, see his prep. Drank a glass over 3 hours next to the much more robust '98. I have to say I prefer the always beautiful '00 with it's elegance, complexity, and Burgundian sensibilities. There's a gorgeous nose here, funk, earth, mushroom, kirsch, lovely dried garrigue, dried spices and flowers, red fruits; red currants. The palate is savory and still energetic, funk, dried herbs, garrigue, cherry, kirsch, with more nuanced anise, citrus zest and light roasted game on a medium plus frame. Grabbed a couple more after this one.

Ripe mature and concentrated. We’ve enjoyed five different vintages on this trip and this has been our favorite as it has the most personality.
Cherry , Kirsch and some funk.

September 19, 2021 - Drinking very well in half bottle. Red fruit, olives and other rhone flavors, well integrated, smooth texture.

Verfijnde, lange afdronk. Algemeen / potentieel: Ik was lange tijd wijn-gerontofiel. 50 + Kleur: 5 + Aroma / bouquet: 11 + Smaak / Afdronk: 17 + Algemeen / potentieel: 8 = 91/100

Colour: Velvety and translucent orange-brown. Aroma / bouquet: Very expressive and mainly tertiary bouquet without even a trace of primary or secondary aromas. At the moment, accents of meat gravy, soy sauce, marimite and a hint of madeira dominate. Taste / Aftertaste: Buttery smooth. Refined soft acidity, refined soft tannins. Soft, yet mouth-filling at the same time. The aromatic complexity is no longer at its highest. Refined, long finish. General / potential: I was a wine-gerontophile for a long time. And very mature Ch9dP also belonged to my preferences. As I become more mature, my preference tends towards wines in a less tertiary phase. And that is DEFINITELY true for Ch9dP. Brilliant wine that I would have liked to drink a few years earlier. 50 + Colour: 5 + Aroma / Bouquet: 11 + Taste / Aftertaste: 17 + General / Potential: 8 = 91/100

July 16, 2021 - Decanted for 1 hr then served in Zalto Bdx.

This was really rather elegant and composed with gorgeous cherry and raspberry fruits bound together with a clean seam of acidity. After 2 hrs the wine opened up considerably to show notes of dusty hedgerow and scrubby rosemary. In a lovely spot and most likely at its peak although I could see this winding down beautifully and gently over the next 10 years.
