September 23, 2023 - Our last bottle opened straight out of the cellar. One of our favorite wineries. A very discrete nose with faint red berries and minerals. On the palate, very dry with still present tannins, revealing a watered down cherry and red currant along with asparagus, which then tries to be disguised as a Rijoa with vanillic American oak on the finish. Unfortunately, in its elder state it is very fruit poor and falling apart. Well past time to have consumed this.
UPDATE: decanted this and the asparagus note resolved. Still bricked around the edges and a very dilute body. But, contributed to a very nice edition of braised beef stew, so not all was lost. -

May 31, 2022 - Fully mature bottle. Dark fruit and tobacco, along with a mineral note. Tannins resolved. Good balance. For near term consumption.

September 7, 2018 - Brookie and I shared this bottle undecanted with our friend Breanna at Vincenzo's. I am a very big fan of St. Cosme, and have visited the winery. I love this label, and am probably a bit biased, but I think everything they make is really good and a great value. So, bear that in mind when taking my thoughts into consideration.
The bottle is in a great spot, and in my opinion, is not likely to improve. Our waitress left the bottle unopened on the table for 20 minutes, and Vincenzo's doesn't have decanters, so I think that may have been a factor, because the wine did open with time. Very smooth, not as rustic as other bottles I have had. Dark fruit, cassis, not the usual raspberry and garrigue I usually detect.
The nose was nothing special, but that may be because of the lack of air initially. I was with two beautiful women who had my attention, so I did not notice how the nose developed with time, but I do recall that the finish was maybe 45 seconds and was well done. Drink this one over the next 5 years. -

June 19, 2016 - What a treat this wine is...!
Dark ruby color, white very narrow rim, medium body. Nose: opens with cherries and plums, dark berries, some dark jam, cedar, spices with very noticeable lavender.
On the palate: tasty, silky, balanced - everything in place, fresh, structured and tasty (again :-). Long finish - 40 seconds plus.
I think this is very good time to open and enjoy this wine, although it may even improve a bit more in couple of years.
