January 12, 2024 - Waiting sometimes has it's rewards and this was one. Extremely pale in color was the first good sign. The aromatics are very delicate so much so that upon opening while you get a classic overall Chablis whiff the primary fruit notes are almost hard to discern -i predominantly described them as pear but with a note of small white flowers as in Jasmin but very delicate. The Oyster shell sea air is here for sure but never mind all of that, what is really impressive is the lightness of expression yet the perfect balance. (read as in perfect acidity to make it all work). The taste is classic Chablis on the ethereal light side of things but oh so easy to drink, it's all about the mouth feel tension which just begs for another sip. With more concentration I would say that there is some yeast like baked good character and as the wine opens up some waxy notes and even a hint of vanilla like powdered sugar that was stored with a vanilla stick. Nothing is out of place, this is a really fine wine at a good place and I would say it should easily drink well for another 3-5 years or more but there is no need to delay gratification. This is definitely a wine for those who appropriate lacy fitness over sheer power. We polished off the first half with 2 dozen oysters and the rest with a simple pasta dish followed by a Pyrenese Erbis sheep milk cheese which was a dope combo. Life is good!

Open nose of stone, apple and seashells with a touch of smoke. Great mouthfeel. Fresh with lots of acid. Slightly oily texture. Long finish with a touch of spice. Still lots of life left. -
