    October 2, 2017 - Decanted to remove the sediment, and drunk immediately.

    16 years - a bit long to wait to drink a simple Bourgogne, even from magnum, and even from a vintner whose wines are notoriously unapproachable in their youth. Purchased about a year and a half ago, the wine had been well stored; it might have had a bit more to offer if drunk then, but I enjoyed it, nonetheless.

    The color, magically transparent and only slightly brick at the meniscus, was matched by a beautiful perfume - soft and mildly fragrant of sour cherry, autumn weather, a wisp of talc. In the mouth, the fruit was less apparent, and clearly at an end, though I felt it kept the acidity at bay (and there must have been great acidity in its youth); the wine was never bitter, and for a short time, it seemed that the fruit grew in dimension, until it was overwhelmed by its age and exposure to oxygen.

    Canary in the coal mine: it is time to open those older bottles at village level and up.
