October 26, 2019 - Opened, poured a small taste and then let hang out for 2 hours in the bottle. This really needed the time I gave it. It adds weight and depth over time. Gorgeous. All the characteristics you would expect from Bonneau just a touch on the younger side for me. This should hit its stride in the next 3-4 years and will go for a decade or two. Nothing but upside from here. Excellent.

September 20, 2019 - Totally primary with apple and pear notes. This gained significant concentration and depth with air. Needs time.

September 10, 2019 - Peter Wasserman Birthday Dinner (The Bristol - Chicago IL): Almost identical to another bottle from a few weeks ago. Apple and pear on nose and palate, this opened up slowly and kept getting better with more air. Certainly upside from here.

August 29, 2019 - Lieu-dit Cur Blind White Dinner (S.K.Y.): Double blind 07/08 Martray/Bouchard C-C. Second favorite, right behind the 07 Martray. Aromas are again intense but more matchstick here and also some lemon-oil and citrus, in addition to the ripe orchard and florals. The palate is more round and voluminous than the 07 with sufficient balancing acidity.

August 29, 2019 - Lieu-dit Cru "Blind White" Dinner Comparing 2007 and 2008 White Burgundy (S.K.Y. Restaurant - Chicago IL): Served double blind to the group, single blind for me. Slightly reductive start, this opened slowly and surely over the next 15-20 minutes. Good richness after 30 minutes with gradually increasing power. At its peak, this will be great for the next decade or even two.
