    September 10, 2022 - Penultimate bottle from a 4 pack, last consumed a bottle about 3.5 yrs ago.
    Beautiful rendition of a vintage Champagne, with all the requisite parts in place.
    Firstly, we have a wine from the 2000 vintage, ~60% PN and 40% Chardonnay, and disgorged after ~10 yrs on the lees.
    I love precision and brightness in my Champagnes, and IMHO, some vintage bottlings over-do the "lees" component, to the detriment of the final product; but not in this bottle. Savory notes are present from the start in this Champagne, but somehow meld marvelously with the flavors of apple, walnuts, lemon curd, and white pepper, leading into a seamless, slate-chalk and citrus-umami finish that is persistent yet elegant.
    I love this Champagne house, and usually reach for a bottle of Charles Heidsieck when I want depth and seriousness.
    Very nice. Drink through 2025+.

    July 16, 2022 - Saturday evening at ES BK with Davyd Ramblings gang. Drank in Gabriel Standart.
    Appearance is clear, medium intensity, gold colour. Legs. Fast fading bubbles.
    Nose medium+ intensity, with aromas of mushrooms, aged brioche, old yelow flowers chrysanthemum, honey nougat, dried orange peel. Developed.
    On the palate, dry, softened high acidity, medium- alcohol (12%), medium+ body. Medium+ flavour intensity, with flavours of sweet honey chrysanthemum, orange peel with some cream, brioche and nougat, integrated toast nut. Very long sizzly finish.
    Excellent quality. Second great experience with this bottle and vintage.

    October 29, 2021 - This came from a special release called Mis En Caves, where Charles Heidsieck released old non vintage champagnes dating back to 1990 and all the way through 2001, alongside a somewhat late disgorged release of their 2000 vintage (this bottle). I opened a bottle of the 2001 MEC (which is a base vintage of 2000) a few weeks ago and it was corked. Thankfully I got a spectacular experience with this 2000!

    I was able to enjoy this next to a ‘96 Krug, 15 Henri Giraud and a few other great champagnes. Richly colored in the glass, almost gold like. Distinct aromatics of pencil shavings/sawmill dust, toffee, espresso, and lemon scone. Lots of depth and richness on the palate as expected, but it’s amazingly fresh. Nougat, more lemon pastry notes and plenty of creamy mousse at the finish. In fact, there were a lot of similarities to the ‘96 Krug, but less ginger and slightly less finesse driven. Absolutely delightful!
