April 4, 2024 - A pleasant, soft mousse, very refreshing and an unmistakable aroma of lemon poppyseed cake. More lemon juice on the palate (there's the lemon glaze to that poppyseed cake), some apple, both fresh green and bruised apple, crème fraiche/cheesy notes, and violet. A bit of residual sugar is present, just a bit, which is very much welcome to balance out that tangy acidity, with a good amount of yogurt and sour cream on the finish (iffy on that) as well as mascarpone (very much welcome). I still have yet to fully jump aboard the sparkling wine train, but this gets me one step closer to the station.
