    December 20, 2019 - Have heard these old Salon’s are dead, but had a real nice 82’ a year or so ago, and this bottle looked like it had great provenance, so we went for it. I do think this was one of the better bottles, with a near perfect cork. Showed pretty well with more freshness and effervescence than expected, but was fairly rapidly oxidizing, showing best in the first hour. Definitely the time to be drinking these up.

    October 30, 2017 - Butterscotch and caramel nose that still has green and yellow apple citrus. Toasty brioche and vanilla bean. Very fresh white flowers. The palate is a beautifully creamy caramel. Dense and rich. Creamy milk chocolate. Good effervescence and zip remaining. Marzipan. Nuanced, but moreover delicious. A perfect bottle.

    February 24, 2017 - From magnum, butterscotch nose, taut acidity, rich but a bit too advanced to my taste. Don't hold on to these, drink up.

    Full, brilliant golden yellow.
    Extremely fine perlage.
    More oxidized at nose: iodine notes evident and some sweet hints: dates, liquorice, jujuba, some honey and...curry. Gypsum.
    Stilla with a nice acidity and long almond, mineral ending

    February 25, 2015 - From magnum; June 2012 disgorgement. Extremely fine bubbles. Fairly complex nose that goes through phases with air time, variously displaying oxidative elements, light stone fruits, light petrol, vanilla extract, warm spices, metallic notes, ginger and even cola. Background vanilla is noticeable on the palate. Still very fine acids. Notes of ginger and walnut on the finish.
