December 20, 2019 - Have heard these old Salon’s are dead, but had a real nice 82’ a year or so ago, and this bottle looked like it had great provenance, so we went for it. I do think this was one of the better bottles, with a near perfect cork. Showed pretty well with more freshness and effervescence than expected, but was fairly rapidly oxidizing, showing best in the first hour. Definitely the time to be drinking these up.
January 5, 2018 - Etoge. Totally shot.
October 30, 2017 - Butterscotch and caramel nose that still has green and yellow apple citrus. Toasty brioche and vanilla bean. Very fresh white flowers. The palate is a beautifully creamy caramel. Dense and rich. Creamy milk chocolate. Good effervescence and zip remaining. Marzipan. Nuanced, but moreover delicious. A perfect bottle.
February 24, 2017 - From magnum, butterscotch nose, taut acidity, rich but a bit too advanced to my taste. Don't hold on to these, drink up.
February 24, 2017 - A 40th Birthday Celebration, Dinner Edition (Atlas Bistro - Scottsdale AZ): From magnum. Fully mature apple and lemon curd aromas and flavors. Excellent concentration and length. Started out beautifully mature (94 points), starting to seem slightly less vibrant when retasted near the end of the magnum (92 points). At this point, a wine best to pop and enjoy, vs linger over.
July 10, 2016 - Time has let some of the air out of the bubbles but the wine is splendid, drinking like a beautifully mature bottle of white Burgundy. There are notes of citrus blossom, hazelnut, toast, white mushroom, lemon and bread. It is rich and creamy in the mouth with a dollop of butter and a wonderful spine of citrus fruit. It is complex and engaging and length of flavour is terrific.

Full, brilliant golden yellow.
Extremely fine perlage.
More oxidized at nose: iodine notes evident and some sweet hints: dates, liquorice, jujuba, some honey and...curry. Gypsum.
Stilla with a nice acidity and long almond, mineral ending
August 27, 2015 - From Magnum and showing brilliantly: still with plenty of blanc de blanc freshness but plenty of complexity on the palate without ever veering into the tired/heavy/drying/yeasty flavours that champagne can give if it's too old.
April 12, 2015 - Saturday with Some Charmers: Salon, Roulot, PYCM, Giacosa Riservas: Very advanced profile. Some mushroom and oxidative notes . Fruit was still present along with some mild acidity. Lacking bubbles. Quite enjoyable but probably past peak.
February 25, 2015 - From magnum; June 2012 disgorgement. Extremely fine bubbles. Fairly complex nose that goes through phases with air time, variously displaying oxidative elements, light stone fruits, light petrol, vanilla extract, warm spices, metallic notes, ginger and even cola. Background vanilla is noticeable on the palate. Still very fine acids. Notes of ginger and walnut on the finish.
