    May 13, 2015 - This one shows its age as it pours deep amber color. Aroma is of peaches and orange. On the palate, peach, sweet apple, butterscotch and blood orange, along with notes of almonds. The finish is massively acidic, tooth peeling even, with a subtle salty tang. If you like Gueuze or Fino Sherry, you’ll love this stuff. It’s generally in the same flavor ballpark. I imagine that if Cantillon made an orange lambic, it would taste pretty much like this.
    It’s not weird or challenging. If you’ve already acquired the taste for wine, there’s nothing strange about this. There’s no further taste to acquire. The acidity and strong fruit keeps it from going into weird oxidized land.
    As far as food pairing, this was absolutely brilliant with flounder meuniere with asparagus. I also bought a chunk of Comte, thinking that it would be a natural pairing, but it was a bit more challenging… take a sip of wine and a bite of Comte and it tastes great, but the next sip of wine tastes like water until you clean your palate with some bread.

    March 7, 2015 - Really enjoy this wine. Unfortunately drank at room temperature but even at that temp can tell how nice this is. Oxidized, sherry like, similar to a Batic or Lopez de Heredia. Do get some vanillin and oak, but probably b/c of the temp. Nice nose, great deep yellow/amber color. This makes me want to explore more Jura wines. Delicious.

    May 29, 2014 - Oh wow, what a pleasant surprise!
    I can see why regions like Jura and Loire are getting so much praise lately.
    This wine reminds me of a cross between sherry, rioja bianco, and aged burgundy. At 14% alcohol it definitely is hot, but nonethless a well made and delicious wine.

    September 10, 2013 - I must start with the beautiful gold nectar robe on this treasure. In the mouth the Bornard is round and full bodied, yet refreshingly brisk like a sea breeze, full of a salty essence I haven't found in other white wines, not even in the '05 edition of this wine. The '07 Bornard savagnin is reminiscent of a fino Sherry with a fleeting glimpse of ripe melon and tertiary flavors that remind me of hikes in the mountains of Big Sur. Herbal, ripe, salty, a dead ringer for salt water taffy without being at all candied. Adult wine. Would be amazing with an oyster or three, or perhaps a bit of Comte. This is big, rich, and acidic so look to enjoy this as late as summer, 2017.
