Friday, January 14, 2022 - Deep golden yellow in colour, the tempting bouquet serves up delicate spring flowers, white pepper, celery stalks, meat spice, cooking salt and wild herbs/Scottish heather. As it opened in glass it was joined by just-ripe white peach, lemon thyme and green apple.
Whilst the entry showed its classic piercing acidity, the mid-palate was broader and richer than expected with more peach flesh, lemon pepper, roast chicken with lemon and sea salt and a sensation of biting into a Granny Smith.
Medium in length, the salty lemon finish has a smear of honey showing some development over that last time I tasted it - just over a year ago (and too much development for my liking). To drink up.
