Thursday, May 27, 2010 - Baume PA Rob, Julie, Mel – Wow, just gorgeous. A study in ethereal balance and expressiveness. Decanted an hour, I almost always decant young Chablis these days. Takes the edge off the bite and opens up the exotic notes, and there were plenty here with that gorgeous spearminty white truffle swirling in and out of a waxy candles-in-the cathedral nose. Lemon thyme, chalky candy, white chocolate and spearmint on the nose and palate. A tad richer style with some vanilla frosting and ripe fruit in addition. Hauntingly ethereal balance on the palate. Gorgeous pairing with appetizer dishes of seafood and interesting things.
