Tuesday, October 27, 2015 - Quince and dried herbs and dried flowers. Subtle oyster shell notes and smoky minerals complex. With air, notes of quinine come out. Palate is super rich with an oily texture that is absolutely stunning. The quinine and pear skin/quince really stain the middle palate and finishes with a saline, piquant sensation. Really good right now.
