This had all the acidity we needed to cut through the fat in our skirt steak carne asada and the fruit really helped with the heat from the chilies. The odd thing is, that with the high level of acidity this wine presents, tartaric acid is listed as an ingredient. Did Ridge acidulate that heavily?
