Wednesday, May 17, 2017 - Not the finest Guiraud ever made, sure, but a CT average a hair over 90? No, this is much finer than that.

Super spicy, in a great way. Pears, the kind of french vanilla syrup you get a shot of in your coffee, toasted coconut, orange marmalade, underripe papaya. Still youthful after a decade+ -- unlikely to improve a ton from here, but could still reach classic (~95) levels before it's all over...

    6/7/2017 3:37:00 PM - Revisiting the remaining 1/3 of the 375ml about three weeks later, and it's more or less same, if not fleshed out a little bit more on the midpalate. 93-94 overall and thinking this will cellar quite nicely if just a few ounces were able to hang on so well in the fridge for that long..
