Saturday, December 7, 2019 - Somewhat improved over the last two plus years, much more demonstrative than I previously remember with wonderful complexity in terms of balance between minerality and yellow fruits and citrus. Poured into a chilling carafe, displays a deep lemon color. Aromatic and flavorful profile yields drying lemon peel, tart lemon juice, salty sea spray, crushed white stone, quince, and some herbaceousness. Mostly mineral driven, wrapped around an acidic core. Long finish focused on the mineral overtones with the lemon rind showing some slight bitterness. This should drink well for at least another if stored properly.
