Saturday, December 26, 2020 - Christmas dinner pairing with a Flannery Beef Jorge Ribeye. Even after a 3 hour decant this was still tightly wound, but started really showing its stuff after another hour in the glass when black fruits and vanilla started showing up ... they were even more prominent on day 2. Fabulous wine, would strongly recommend pairing with a big fatty steak and an extended (6+ hour) decant. Probably has 10 or more years to go.
