Monday, December 28, 2020 - I knew I was trying this young, so do yourself a favor and give it 24 hours of slow ox as it's a completely different experience from Day 1 to 2. Day 1 was notable for a primary bell pepper note, but the fruits really showed up on day 2 along with hints of smoke and bacon. Will give my remaining bottles a couple of years before checking back in.
