Sunday, April 18, 2021 - Savoury acid with a hint of pepper and bacon, and a suggestion of oak. Tannins are mild, the pepper blows off with more air, and the wine is a little bit too acidic for enjoyable sipping immediately after opening, and after 12 hours air. In between it's not bad at all, but still better with food. It's just a bit angular.
With about 150mls left in my glass, I found it hard going so I experimented by adding a half-spoon of caster sugar, caster for easier dissolving (and it did dissolve easily). Improved the perceived acidity situation quite a bit and the wine seemed fruitier.
