Monday, September 6, 2021 - Having finished my 1985 Veuve, I was looking forward to my first taste of this 1996 Grande Dame. It has, like its brethren, aged into a champagne with a beautiful Sherry-like character - more restrained than the 1985 vintage at this age, which makes it easier to pair with food (still worked nicely for caviar but was too sweet to pair properly with scallop ceviche). It would have been a perfect wine for cheese! A delicious wine that is currently in-between its early phase and its later-more-decadent phase (for which it should last another 10+ years). I would not hesitate to let sit for another 2-3 years if you like the sherry-like phase, but otherwise drink up fast.
