Friday, December 31, 2021 - When first opened, the wine had aromas and flavors of olives, smoke, and meat. Indeed, if tasted blind, I would have mistaken it for a Rhone! After being opened for an hour, the wine put on weight and developed much more of a cabernet characteristic. In my opinion, the wine has not peaked yet. It is still dark in color with little legs, and still has a good amount of tannin, acid, and fruit. Secondary characteristics were not prominent. At this stage, I'm not convinced that the wine will ever merit its perfect 100-point Parker score.
