Wednesday, July 6, 2022 - 7/6/2022 Double Blind Night at Kevin's: [From magnum]
A completely different showing than the bottle I tried last month. This was a different beast, being more delicate and fresh. Still showing strong autolysis notes as before, but with the addition of tropical fruit coming in a hour after opening. Still showing a lot of similar notes as before, but the magnum is definitely in a different spot than a regular bottle right now. Definitely worthy of drinking if you like your Champagne brighter, leaner and fruit forward. I do believe I would want this more aged, despite its brilliant showing right now. It just has so much potential, and I think it can be so much more with more time. 94++ pts

    7/7/2022 6:27:00 AM - Thanks for your note, very helpful. But I assume the dreaded auto correct is responsible for your use of the word autolysis, which would not seem to be an attractive note for champagne?

    7/7/2022 12:26:00 PM - Ah, but I did intend it! In Champagne winemaking, autolysis refer to the winemaking process of the time dead yeast (known as the lees) spends reacting with the wine, usually giving the wine yeast-like flavors. With this Dom Perignon I’m more so referring to the pastry and yeast flavors, such as the slight sour twang that doesn’t come off as citrus, and in some cases, a mix of both almost like a lemon curd!
