It also makes more linear, as the acids focus the fruit, which does not spread out on the palate as much as other Bedrock Heritage wines. More food friendly, if less luscious, there’s a good balance, and also distinctiveness. Early days, and plenty of material for further aging. Drink a bottle soon to catch the brightness, but age a few to see what happens as it evolves.
