Sunday, April 12, 2009 - This one was singing tonight. Popped and sat for an hour or so before pan seared hanger steak, frites and caramelized brussels sprouts with pancetta and shallots. Strong nose, classic earthy St. Emilion on the tongue and very long finish. Note: Should have stood it up for a couple of days prior as the sediment is quite fine.
