Friday, February 10, 2023 - I had a bottle of this about 3 months ago and I was looking forward to opening another. This is such a unique wine coming from Julian Haart. A real departure from the style of wines that has made him famous. I think that is one of the reasons that I like this wine. I appreciate that Julian was willing to think outside the box and make something different. I feel like the experiment paid off and we have this single release to enjoy as part of Julian’s journey.
This reminded me of a super dry apple cider with notes of beeswax and the tannins of apple skin. It has a great purity and mineral clarity. There was a delicious ginger spiced mineral water thing going on that makes this so easy to drink.
