Wednesday, March 29, 2023 - Disgorged 02-22, cork shot out as I was removing the wire. Stayed in the cage though, no dent in the ceiling. First pour at cellar temp (49°) Quick whiff of crescent roll dough and white peach. Up front the mouse is broad and persistent, tart green caramel apple, followed by lemon/lime/grapefruit, but it has a creamy texture. After a little swirling it’s practically a still wine, the finish sporting a little more dough but also a mineral presence. Wondering about the disappearing act by the bubbles. As subsequent pours approach room temp a little nuttiness comes to the forefront the palate is still broad but the acidity is intense and hurts my teeth a bit. No more swirling, bubbles intact. I like this but finish is almost too austere. Almost.
