Wednesday, April 12, 2023 - Hint of caramel, grapefruit pith on the nose. At this stage palate is all pure grapefruit, minerality. Excellent texture/density & length. Needs a bit of time. Held up to a garlicky Ottolenghi pasta. Beautiful work.
