Thursday, August 10, 2023 - This was the best of the bottles, so far, of the 1990 vintage of DP from my cellar (still one to go). I was met with a good strong 'pop' with cork removal (which was not the case with earlier bottles. Pale yellow to golden color with a slight orangish tint. Lots of small bubbles which faded after about 5 minutes (carbonation though, was still present in mouth), along with a nice mousse noted on each pour. Limited nose (mild apple). On palate - Definite note of apple, hint of honey, butter, and toast, and with presence of mild oxidation note. NOT getting oyster shell or yeastiness notes. Mature DP, a bit past its prime, but still excellent. After several hours, very enjoyable additional notes of caramel and butterscotch on the nose.
