Friday, December 1, 2023 - My last bottle and a winner. This still has plenty of time ahead. Decanted 45 minutes. Medium lemon yellow color. Cold room temperature which was correct. Tons of extract and density here, almost too much at first. Mouthfeel was not viscous but almost harsh. Classic Chablis with salty, lemon and jasmine notes. Very restrained. Great with food of course but something creamy would be best given the structure. Part of me wishes I had kept this for another five years but it was also really wonderful.
