Sunday, May 5, 2024 - From a bottle opened today. Bracing acidity, toffee, sour lemon (fish sauce??), hint of brown sugar, marmalade & earth flavors persist with almost a character of cedar. Densely flavored but lightweight on the palate, will pair beautifully with many different seafood dishes. My previous bottle evolved beautifully over 2 years open, this is headed the same direction.
