Sunday, May 30, 2010 - The Kitchen Cabinet does Per Se (Per Se, East Dining Room): The fill was base neck; James decanted this for us about 1 hour prior to service. A purple-ruby core, turning to ruby-red at the rim. The aromatics have developed considerable complexity over the past several years, as in addition to the ripe dark fruits scents, I detected notes of fennel, roasted herbs, and truffle. Medium-bodied, with good balance and impressive delineation on the finish. While certainly not as opulent or outgoing as the '90 Lynch Bages which preceeded it, the '88 Mouton is clearly a fine wine, albeit a more "classic" style.
