Saturday, January 22, 2011 - This was double decanted an hour before bringing to the restaurant. There was considerable sediment, of course, and a beautiful pale light ruby color. Wonderful nose of rose petals, cherry pie, and earth. There was this great inner core of sweet fruit in the mid-palate that surprised me, with sour cherry, leather and a distinct earthiness on the finish. This changed a lot over the course of 3 hours, seemingly shutting down and then opening up again. After 3 hours it was still going strong, but the finish fell off. Lovely!
