Saturday, August 19, 2006 - A pale golden color with a fine bead. The nose was closed on opening but gained some notes of yeast and apple with time. The palate was not terribly complex on attack, but had mature yeasty flavor along with youthful notes of pear, green apple, and citrus fruits for the well balanced midpalate. It gained weight with time. The near endless finish completed a wine of great poise and finesse. Not a blockbuster, but quintessential mature champagne. Not intellectual, but highly hedonistic, leaving one yearning for more.
