Sunday, September 18, 2011 - Of the 2008 Cabs we tried with Craig, this was our number 3. It has a lot more structure that the Spring Mountain, also more tannins. Also has more black fruit, and more pepper. Started out more tart, but it too had a sweeter finish. In general, it seemed to also have more fruit than the Spring Mtn. Right now, of the three Cabs, this one is already more approachable, but can definitely use some more bottle aging time. To me this one would go the best with steak or grilled meat.
