Saturday, February 11, 2012 - Fragrant aromas of beeswax and flowers. Melange of full rich flavors: honey, apricot, and minerals, among others. Caramel notes and some of that chenin blanc wool in the lingering finish. Beautiful when first opened, but really starts to hit its stride after about an hour. Wonderfully balanced, with electric tension between the honeyed flavors and acid backbone. This is simply sublime even when young, I need to show some restraint with my remaining bottles so I can see what it will do with some age on it.
