Monday, March 12, 2012 - A small glass with dessert. This was showing pretty shut down but there's a ton of underlying material here. Apple sauce, honey, and almonds on the nose, where you can smell the chenin wooliness. Structure dominates the palate, where there's currently a hole in the midlde, but the finish, while austere, is long and intense. This tastes drier than some secs I've had, and I think it just needs a long sleep, or a lot of air, to fully fill out. Come back in 10 years.
