Monday, April 2, 2012 - Light straw colored. Muted at first, the nose opened up to be seductive with lemon zest, apple blossom and honeydew. It has a saline quality in the mouth, with lots of taste of citrus and apple cider. Although the acidity was very tight just out of the refrigerator and just opened, it mellowed somewhat as it warmed and revealed a lovely balance of the fresh fruitiness and acidity. A good 30+ sec finish with lingering acidity and some minerality. I am very glad I bought a case of this.
