Saturday, November 17, 2012 - Initially a big meaty funk on the nose, which somewhat blows off so that a sweet, spicy oak blend is also apparent. On the palate, New World mouthfeel but more savauge flavors than most from Napa. This bottle seems to have more structure than the last, as both acidity and tannins are evident. In the case of the latter, these are kept in check, and everything is relatively well balanced. A couple hours later, this wine really hits it stride. The meat on the nose has become a beautiful leather out of an English saddle shop. Surprisingly, the palate becomes much more subtle and integrated. Could be a function of all the savory appetizers served since this was first opened, but it is really shining two hours later in this meal-oriented environment.
