Sunday, February 11, 2007 - This is the final syntetic cork sealed bottle we have (one was born with real cork, the other three I vacuum recorked at Cadence winery last month. Although Erin guessed it to be Veltliner from a ripe vintage, and went so far as to peg it as a 99er, this bottle displayed little of the premature oxidation that others have. A bit of florid mushroomy umami in the nose, a bit of advanced color, but I am no longer panicked to drink those three fakies this year. Although I won't tarry significantly. Defoil yours today! It might be approaching its death knell!
