Monday, May 7, 2007 - Light red, some legs form. At its best an hour or so after opening, served at 12C and then upwards. Nose is of sweet cherry with some creamy notes. On opening the palate was very jammy, a little too much, but later there's more woody, vanilla nuances. The balance is a little warm. Paired very nicely with a tomato sauce. I think Beaujolais, with its fresh light fruit, pairs well with tomato in general.
