The first night we took it out of the cellar, opened it and poured a couple of glasses which we let sit while it came up to room temperature. Even after sitting for about an hour, the wine was still all over the place. We enjoyed a glass each and then stuck the cork back in the bottle and left it on the counter. The next night we went back and tried it again and it was completely different. Everything was wonderfully integrated, balanced and smooth with nice fruit mixed with dark chocolate on the nose and a great finish.
