Wednesday, August 22, 2007 - Wow. Opened and compared against a highly rated (93-94) Australian Cab (Mitolo Serpico) for kicks. No Comparison. This wine has grandeaur. The notes are of cedar and coffee. The sparkling tannins and back end bitters strongly suggest this should be opened after another five years. It is the type of body that sucks the moisture out of your mouth before you can fully taste the fruit. I'll report again tomorrow night when the rest of the bottle has a chance to decant. Special wine.
Second night the tannins have settled a bit and a strong dark cherry flavour has emerged. There is notable spice on the back end. Excellent wine.
