Wednesday, February 11, 2015 - Opened a bottle to share with my soul mate over a dinner at Taste Paradise, ION Orchard tonight.

Colour was dark brown with red hues on the edge. On the nose the wine is charming with aromas of raspberries, cassis and liquorice.

On the palate the wine is soft, elegant, feminine and gets more complex over the course of the dinner. Some leathery and oaky notes, and the presence of fruits and acidity keeps the wine in good shape and structure. After an hour in the decanter the wine appears to be more approachable and enjoyable.

The balance of all the key elements makes this wine a memorable one. This is one of the reasons why St Julien remains one of my favourite appellations in Bordeaux.
