Friday, May 29, 2015 - PnP at refrigerator temperature a week after bringing it home from the winery. This is carbonated during vat fermentation, not the Champenoise method. Presents as straw yellow with some green highlights. Nose has core aromas of doughnut and pineapple core with secondary apple, baking spices, and cooked peaches. Very pleasing! The bubbles are a bit coarse, but not aggressive on the tongue, and just stimulates the tip of the tongue. This is remarkably well-balanced, with medium acid and, I think, just a tiny touch of residual sugar. Flavors definitely come off as "apple fritter"-esque along with some spiced stone fruits.

We really enjoyed this bottle. It seems to be a very well put-together wine, and our experience with an older bottle (an '07 that we drank early this year) proves that this has some aging potential. The fruit, bread, and acidity in the wine provided a very nice pairing to slightly meaty/funky Dubliner cheese. "Excellent," 91/100.
